Garlic Dill Pickles, Kimchi Mango, all kinds of canning yumminess!

So I've been meaning to write this post for at least a week, but various life "things" have gotten in the way and thrown me a bit off course. Better late than never though :)

I had a busy week (when I made the Strawberry Mango Jam) and these two recipes were also a part of that!

First up is Garlic Dill Pickles. I've never made pickles before. I love them so I'm not sure why I haven't tried. I used a recipe that I found on Epicurious here and modified it slightly...and at least doubled it! The pickles came out great! We just tried one tonight...tasty! I would even say add more garlic next time!


Next up was a recipe that I've been wanting to try for some time but have been putting off because, well, I was intimidated! I had it for the first time when I was in Guam and loved it...and figured that it was WAY out of my skill set! I was so wrong. It's easy! I got the recipe from a friend (from Guam) and found the necessary Kimchi base and went to town on some giant mangoes that just so happened to be on sale that week! Voila. Kimchi mango!





I'm still impressed with these skills that I didn't even know that I had!
Most of these projects were the result of a need to burn some excess stress...so far only great things have come from that! I can't wait for the next projects!

Strawberry Mango Jam

So I had huge success in what could have been a big disaster! I manipulated my mom's strawberry jam recipe (which is amaze-balls FYI) to incorporate one of my favorite fruits...the mango...so here it goes friends...
Strawberry Mango Jam. Yup. It happened. And I'm sharing the recipe with everyone :)

Strawberry Mango Jam
By: Laura Snell (recipe adapted from Ann Snell’s strawberry jam recipe)

3 pounds strawberries
2 large mangos
1 package Sure Gel (natural)
2 TBSP lemon juice
3 cups sugar (I used organic raw cane sugar)

sanitize jars and lids

chop strawberries (small) and mangoes and place in pot
Add lemon juice and Sure Gel
Stir and bring to a rolling boil
Add sugar and return to a boil, cook for an additional minute
Remove from heat
Skim foam from the top
Star putting the jam in the jars (wipe the rims completely clean)

After filling and putting the lids on flip upside down to seal (you will hear a pop after a bit)

This is a beautiful jam if I don't say so myself. The color combination from the strawberries and mangoes really brings the jars to life! I can't wait to give it the taste test! Now what flavor to make next? Suggestions? I'm thinking something with blueberries

Cape Cod mini vacation

Getting back to reality is so hard to do!
It was amazing being able to spend a few days at the Cape with monkey. We had 3 solid days at the beach (with perfect weather I might add). Monkey didn't get out of the water for a straight 6 hours the first day!

Being on the Cape and in MA in general just reminds me how much I prefer coastal living. TX is a right now home but by no means a permanent one.

With that being said, I have a new goal, a new item on my vision board...I will buy a beach house on Cape Cod. Furthering that goal, I would like to pay cash for it. Do I think this will happen immediately, hell no, I'm realistic people. I know that I have to just about sell my soul to get one, but who really needs a soul when you have an amazing house within walking distance of the beach, with an outdoor shower and a view of sunsets. I think I'd be ok being soul-less!

So, to make it happen I really need to make 2013/2014 very successful years with my business. I need to work each day remembering my goal!


Granted, this isn't my "dream" beach house, but you get the idea. I'm a visual person and having a picture helps to remind me what I'm working for!

Back to the mini vacation...based on a recommendation we went to Four Seas Ice Cream. What a fun stop! This little ice cream parlour is Cape Cod famous. They've received many rave reviews and awards and have also been in some tv shows and movies! Needless to say, we weren't disappointed with our ice cream!

If you're headed to Cape Cod, add this one to your list! They have sandwiches from 10:30-2:30 and I've heard that the lobster roll there is fantastic, but it was over $18 and thats a little too pricey for my blood, especially if I'm going to be paying cash for a Cape home in the near future!

Beachbody Ultimate Reset Week 1 overview and start of Week 2!

Ok so this post is beyond overdue! I have finished Week 1 of the Beachbody Ultimate Reset, heck I'm almost done with Week 2 now! I'm feeling great and vegan is a lot easier than I thought it would be. Now, it's certainly nothing I have a desire to stick with long term, but for the purposes of the 2 weeks of vegan in the Ultimate Reset, it's simple!



The supplements have become a breeze. When I first poured the Detox powder it looked horrible, but it's actually pretty good and has a slight lemon taste to it. Good thing it isn't foul because you drink it 3x a day during Week 2!

I have been weighing myself daily but have decided that that is probably not the smartest idea, especially for a female with fluctuating weight based on cycles, etc. I'll keep doing it this time but when I do another Reset I'll weight once per week, or just at the start and finish of the reset. So far I'm down 6 pounds!

Other benefits: No acid reflux, no bloating/stomach issues, improved digestion, not feeling hungry, eating smaller portions, more conscious of what I'm eating when I do eat.

Beachbody Ultimate Reset Days 3 & 4

7/7/13

Ok so I'm writing the Day 3 and Day 4 wrap ups at the start of Day 5, so I've already weighed in (and I'm quite happy that each day has been about a pound decrease with the exception of yesterday that was only a .2 lb decrease).

As of today I am 4.5 pounds down from my start weight. Not bad for 4 days, eating healthy, working hard. I love it!

Day 3 and Day 4 meals have been similar because I'm using leftovers. It just makes it easier for me to make a big  batch of something then eat it for a few days!

Breakfast: Steel cut oats with blueberries on top. This was my first experience with steel cut oats and I have to say that I really like them!


Lunch Day 3: Grilled Salmon and tomatoes
Lunch Day 4: Grilled Chicken and tomatoes and a small side of mango pico de gallo

Dinner (both days): Salad with grilled salmon and tomatoes (made on spinach)

Like the first two days, I'm never feeling hungry. I did feel as though on Day 3 that I did not have enough water because I started to get a headache and it got pretty bad throughout the day.

I'm so excited to see where the Ultimate Reset takes me! I really hope to continue with the momentum that I have!

A note about the supplements: They have become simple. Even the alkaline! I got over the nasty color/taste and just shoot it down the hatch! I find that the least amount of water that I put in there, the smaller the shot, the quicker it goes down! Sometimes you get a chunk of undissolved powder and that's kind of gross, but it's quick and painless and you can chase it with the mineralize that you have mixed in water!

Beachbody Ultimate Reset Days 1 & 2

7/3/13 and 7/4/13

I had initially intended on writing a post a day for the 21 days of my Beachbody Ultimate Reset, to document how things were going, the food, the supplements, the progress, the challenges, etc. As you can probably tell, time has gotten away from me, so you're getting a combo for days 1 and 2!

Day 1:

I figured this would be a disaster because I had been on a downhill spin with diet. Vacation, stress, and indulging way too much had led to some serious weight gain, and the sugar addiction is in full force!
Surprisingly, Day 1 wasn't bad at all. I didn't ever feel hungry, I was very aware of the timing of my meals/supplements and reduced/eliminated snacking that used to be a pattern.
So far my schedule has been really flexible, allowing me to be home around the necessary meal/supplement times, but should that change the Ultimate Reset gives you a little bag to carry the supplements with you.
Breakfast was scrambled eggs and some veggies
Lunch was a salmon burger, asparagus, and a side of mango pico de gallo (I have decided to follow the menus but also supplement my own foods)
Dinner was a failure, went to dinner with a friend and had wings (ate a salad too)
The challenges: The alkaline supplement is pretty gross. Both the taste, the smell, the the look. It's hard to get down!
For exercise I did Crossfit
I also mowed the lawn that was WAY too long (which may or may not have been equally as strenuous as the Crossfit workout!)

Lunch

Day 2: Weighed in and I  was down 2.3 pounds!

I didn't sleep well. I was plagued by nightmares (I never remember dreams, let alone have nightmares).
After the weigh in I was feeling really positive and motivated to get the day going and really stick with the meal plans rather than straying with unhealthy choices.
Today I decided to just put the oxygenize droplets directly in my mouth rather than mixing them with water, this worked just fine, the taste is mild and it gets the job done quickly!
Breakfast was scrambled eggs and half of a grapefruit
Lunch was a salmon burger and asparagus (leftover from yesterday, I grilled extra!)
Dinner will be grilled salmon and a salad
For exercise I mowed the back yard (even worse than the front yard noted above, took me twice as long as it usually does because of how long/thick the grass was!)
Today the alkaline wasn't as bad, I knew what to expect which made it easier. It reminds me of a wheat grass shot.
Went to the grocery store and stocked up on some more Ultimate Reset approved foods, really wondering how weeks 2 and 3 will be when I go completely vegan!
I'm feel really good, again, haven't felt hungry, and the sugar cravings haven't been bad at all.

salmon, flash mobs, zumba, crossfit, health, fitness, friends, coaching, wow!

Wow, so it's been a little while since the last post. Whoops! Didn't mean to let that happen! Since my last post: I've had a birthday...I'm dangerously close to mid-thirties, I've had a great week in the gym (PR's in back squat, front squat, snatch, and clean & jerk!), I've made some pretty delicious recipes...in my hotel room (that has no kitchen!), and I've spent time with some amazing people in my life (including supporting a friend who was doing a surprise (not so surprise) flashmob!

I guess there's no need for more writing since I summarized it all in one sentence. I'm impressed!

So, let's start with salmon. I made a delicious Herb Crusted Salmon from one of my favorite paleo sites, PaleOMG. I did all of this in a hotel room with no kitchen so trust me it's easy! I used a toaster oven to bake it!

I've spent a lot of quality time with some really amazing friends over the past few weeks. It makes my upcoming departure from Okinawa THAT much more difficult! I'll truly miss our laughs, jokes, and time spent!
